US Season 6 - Amy's Baking Company - OPEN

Open or closed? OPEN
Location: Scottsdale, AZ

Air Date: May10 2013
Filmed:  December 2012

Episode Summary: Gordon visits Scottsdale, Arizona to help turn around Amy's Baking Company. Opened in 2006 by Samy and wife Amy, Samy runs front of house and Amy runs the kitchen. Samy spent over $1 million opening the restaurant for wife Amy with her passion for cooking. Things have not gone smoothly with scathing blog reviews to which Amy says they have lied by saying her food was disgusting and as a result of these reviews she has lost business. Samy is defensive of criticism of his wife's cooking and if a customer makes a complaint Samy asks them to leave and tells them not to come back. Amy's attitude to the customers is that are not always right. The server describes Amy as nuts, she makes pizzas over spicy so it hurts them, she says she will hurt someone if they send back her cake and has regular tantrums and also says Gordon is wasting his time, they will never change.

Before Gordon arrives Amy and Samy prepare for his visit by doing a big cleanup. We discover that Miranda, the only server in the restaurant isn't allowed to input the orders, serve wine or handle the cash, Samy does these. Amy only cooks one ticket at a time so the diners are waiting a very long time to get their food. A pizza is sent back as undercooked and Amy says she will send it back burnt. One customer has enough of waiting for his pizza, goes to counter to ask about pizza, is given a tirade of abuse from Samy and Amy with so many bleeps and tries to leave, Amy threatens to call the cops and Samy tries to stand in their way to stop them leaving! The customers start leaving and Amy has some kind of teary rant as she storms back into the kitchen.

Gordon arrives the next day unaware of the previous evenings disasters. He praises the decor and how great Amy's pastries on display look. He is taken on a tour of the kitchen and sees a clean kitchen and a walk-in so clean it is like a sterile doctors surgery. Gordon sits down with the couple and samples a slice of Amy's cake while they talk about the restaurant, they tell Gordon that they have gone though hundreds of employees, as they can't find staff that aren't dirty and lazy and want to work hard and their problems are from scathing reviews from internet bullies. Amy tells Gordon that she replies to them and are the only restaurant owners to stand up to them calling them morons and more. Gordon asks if they have children and they say no they have cats, Amy reveals she speaks cat and Gordon tells them both that they are nuts.

Gordon sits down to sample Amy's dishes and is told by the server that she is on a regular hourly wage and doesn't receive tips, Gordon is astounded. Gordon orders the pear and fig prosciutto pizza, blue ribbon burger, salmon burger and red pepper ravioli. There is a doorbell for the potwasher to come collect dirty plates adds to the madness. The pizza is very sweet with raw dough, it's send back and Samy tells Amy that there was nothing wrong with it and after an hour wait he is waiting for the rest of the food. The blue ribbon burger has a soggy greasy bun and is not cooked medium rare, it is overcomplicated and is dripping in liquid. The ravioli smells weird and is the most confusing dish he has ever tried as it is sweet and spicy. It is also not homemade as he was told, it is store bought. The salmon burger is overcooked and like eating dried cat food. Gordon talks to Amy about the food and tells her that it was longer than expected and that after an evening service he will sit down with her and raise all his issues.

Gordon arrives to witness a dinner service, he is in the kitchen and Amy tells him Christine does the salads and she does the pizzas. Amy is in denial that her pizza was undercooked, the combination of flavours on the burger doesn't work and that the burger is not good dry as she claims the customers love it dry.... Real customers love the taste of the frozen ravioli so Gordon takes them into the restaurant and the customers say they are okay for them to be removed from the menu. Amy can't take the criticism and says to 86 the burgers too and people can only order cake. The chaos continues,  Samy has left a pasta dish off when he input the order from the written ticket and Amy wants to send Katy home for simply asking a question. Amy tells the staff to ignore everything Gordon is criticizing. A full plate of food untouched goes back to the pot washer and is not taken back to Amy. Amy ignores it and continues on working. A customer leaves a $10 tip and Gordon asks if it is going to go to the server and he says no. Gordon asks the customer if they would leave tips knowing it's not going to the server and only going to the owner. Samy starts arguing with Gordon and Amy closes the kitchen. Amy sacks Katy for no reason at all other than asking a question and Samy tries to stop Amy from firing her, she says she is quitting as she has had enough, Amy calls her a poisonous viper and is totally unfair to her!  Gordon sits down with the owners and is astounded by their responses to him and they remain to be in denial about the quality of their food. Amy tells Gordon that she is going to do things her way when he tells her to keep an open mind for change.

Gordon arrives the next morning to start to help them change but when he arrives Samy and Amy aren't at the restaurant. Instead, he goes off to meet former staff members Jessica and Henry. Jessica worked there for a year and a half and was hired as a runner, despite going to culinary school as those who had been to culinary school didn't know anything, she was only allowed to pour glasses of water and begged to go into the kitchen. Henry was a busser and said Samy was always in a bad mood, isn't professional and made him wash his car for him! Despite Henry's obvious poor experience at the restaurant he hopes that Gordon can help them. Gordon returns to the restaurant where Amy wants to clarify a few things. Amy is defensive of her ravioli after Gordon was told it was homemade. She is manically defensive over the burger denying that Gordon had told her anything was wrong with the burger, he told her many times it was soggy. She says he told her the salmon burger was dry but wet, it is unbelievable and he tells her is never confused about food. He also tells her the way he screamed at Katy, or the "kid" as Amy refers to her, did was out of order for firing her for asking if she was sure about something. Amy tells Gordon to prove that over 50 people have been fired, Samy says actually it is over 100. Amy has an explosion about drinking a glass over water and threatens to go home. Amy is insulted and tells Gordon that he disrupted her service and blames everyone else for the problems. Amy tells her she is delusional and that in "Amy's world" everything she sends out and touches is perfect. Amy doesn't want to hear anymore but Samy tells her to listen to Gordon and let him finish.

Gordon tells her she is too far gone and says lets end the show. Gordon tells her that he can't help people that can't help themselves and cannot ever take one ounce of criticism and if they aren't willing to change he isn't going to argue, scream and butt heads. The restaurant is not normal to go through that amount of staff, run such a huge menu from such a small kitchen, the level of animosity in the restaurant and outside. They have the right to run their restaurant how they want but he is going to do what is right and what is right is to walk away. He wishes them good luck and leaves. Amy says she doesn't need his help and things will continue without him. He says for the first time in over 100 Nightmares it is his first to walk away as he cannot help and any changes he would have made they would have undone so there is no point continuing.

What Happened Next? They temporarily closed the restaurant to reopen on 21st May 2013.  Miranda was  fired for taking a tip that a customer had hidden for her and is now working for Cracker Barrell. The owners have become a social media sensation with internet memes and comedy reviews of the restaurant appearing and then disappearing on Yelp. Negative comments were responded to on the Amy's facebook page, after a tirade of abusive and insulting posts the owners claimed that their Facebook, Yelp and other accounts were hacked. Petitions have also been set up in light of the apparent law breaking involved in withholding tips from the servers. Details of Amy's past including a criminal conviction for using someone elses social security to obtain credit have surfaced. The owners claim they have received death threats and have hired a PR guru Jason Rose to help them with the media backlash. They then cancelled a press conference and were dropped by the PR company after legal threats from Fox. They reopened and customers had good and bad to say. As of August 2013 they are selling merchandise with phrases from the tv show.

Recap

The episode goes through the social media outbursts and interviews with Buzzfeed and Huffington Post writers talking through the media surrounding the show. Gordon introduces new footage including more meow footage and Amy explaining that she only has female kitchen staff as the kitchen is too small so the staff bump into each other and men are rubbish at cleaning. An argument is shown with Gordon criticising the dinner service and the frozen ravioli. There is also footage of an argument over pre packed gnocchi and the tips, Amy tells Gordon that the servers don't deserve the tips as the staff don't work as hard as her husband. Gordon shows their submission video which features Amy criticising Sammys customer service skills, the walk in being "a mess", Amy explaining there has been a few incidents with customers and that she has been retaliating to Yelp reviews.

The staff talk about what happened since the episode, they fired everyone and then begged the staff to return. One waitress was caught taking a $5 tip from a customer and this started an argument. The waitress left as she was not happy. The restaurant has since become a tourist site with people coming to see if the restaurant is really as bad as it was on the show. A couple is interviewed and their dining companion had 3 fruit flies in their drink, they were accused of putting them in themselves and then asked to leave the restaurant. They have tried to cash in on the notoriety of the restaurant by selling t shirts with slogans from the episode.

The couple is interviewed by Ana Garcia, Amy initially says that she has no time for an interview and Sam wants money. They believe they were set up and the episode was not fair. Amy says they were look psychotic and look crazy. She believes the restaurant was filled with Yelpers, she claims to have proof of this. She says they were just defending themselves and have tried to improve on the negative. She claims that since she has been plagued by rogue customers just browsing or placing fake rubber cockroaches in the restaurant and that she has to stand up to these people. She says that the initial Facebook comments were not them but  because of the trolls they are now reacting with insulting comments. Samy says that they are now giving the waitresses tips and as they are taking this approach that the waitresses are being paid less as the restaurant is empty. The ravioli is still frozen, there is more abuse at Gordon and Samy still believes Amys food is excellent. Amy ends with saying that if you come to attack them they will throw them out.

    3. That might be a while... In the follow up, Samy yells at one point that he has the money to keep the place open no matter how bad business gets until "the stupid people become smart and then they will come again to us, and they will" when he was asked about whether he had repeat customers. So sounds like he's got money to burn for a long time.

Amy sounds like she was one of those extremely spoiled children who throw fits to get their way and now can't understand why the temper tantrums aren't working to stop the mean things from happening anymore.

Both of them though seem a little off, like delusional and kind of paranoid. It's a bad combination with those two - I bet they'll keep the place open til it's just them running it and even then as long as they can just to show all their "haters" that they didn't win - at least in their minds.

I wonder how much trouble they'll have getting staff - I guess if you were desperate enough for any job though.

How many Michelin stars do you have Amy?

    1. Number of Michelin stars that earn for Amy Baking Company is -50, yes minus 50 in the hole. Lowest rate any business can earn is 1 (must earn 5 star point before can earn Michelin point). This mean Amy Baking Company earn 2500 stars in the hole. :-)

  7. Well, once more proven that an enormous ego and lack of social skills are the worst enemies to whose who decided to work in customer service!

Always a warning sign to those who are seeking new job: there were hundreds of people getting fired here before, they cannot ALL be bad workers. So anyone who is interested in position of restaurant worker there should think twice. Good places have more or less stable crew working. Personnel flow is a bad bad sign!

  9. I'm pretty sure I know what's going on here. This guy invested $1million in a business because an investment of that size automatically puts an immigrant on the Green Card fast track. He probably doesn't even care if it succeeds or not - it was all about his immigration status and trying to avoid having the Feds look into his previous drug trafficking charges in the Middle East.

Also all the hidden money ie;keeping tips from staff, not charging meals through the till, booze not recorded through till and I would bet there are many other lurks that Sammy is doing (of course I have no definite proof of these things happening but have no doubt the restaurant is being used as a money laundering operation.

Amy is such a nasty nasty person. the sooner Sammy's money runs out I'm sure she will be out the door onto the next mental defective "gangster'

      Delete
    2. Well yeah, none of them are of her making. They are bought from different bakeries, where she then changes them to suit her psychotic needs for attention. She does this by sprinkling edible glitter on everything and adding horrific figurines that a child can make better.
They only real reason they are open is because Samy chooses to feed this woman's negative ego.

    3. The posters at Reddit did some fantastic detective work and uncovered Amy was buying all the cakes and pastries in from suppliers (hence all her comments about "reselling" ).
Also the pics used on her internet pages and taken from the original sources and are not her cooking or property (whether that's legal or not I'm not 100% sure but is still dodgy) !

  12. Employees need to see their customers as more than 20 percent tips in order to give them personal service.

Sorry to shock you with its simplicity but as “social” as the world is now you cannot use the business model of the past and still succeed. Your customers have proven a fickle bunch moving on to the next “new, hot restaurant or type of steak” at the drop of a tweet or “like” of a page and you better catch up. Your food and location are no longer the major factors in guaranteeing regular, repeat customers anymore, your service is.

One way to achieve the success you are looking for is by helping your servers to genuinely love their time with your customers. Help them see your customers as allies and partners in your employee’s dreams and ambitions and you will accomplish this twofold.

When guests return repeatedly and get woven into the fabric of your restaurant’s community it’s just human nature for them to take an interest and begin caring for those who care for and serve them.

But ask yourself this, why should your employees work at creating good strong relationships with your customers if you view those customers only as your customers?

Good restaurant managers tirelessly generate regular clientele, repeat business, a following, great customer relationships for our boss’s business and for our employees all the time, that’s what we’re paid for but why should your wait staff? Would you go to someone else’s business to create rock-solid regular, repeat and referral customer base on top of the job you are already doing? A solid base of regular customers that you are cordially invited to leave behind after years of development if you choose to work elsewhere? Well if doesn’t make sense to you why would it make sense to the intelligent people you have hired?

That would be like constantly arranging dates with supermodels for someone you barely know and going home alone every night.

Look, do you yourself a favor and realize the sentence “The customer is never an interruption, he is the reason we are here,” is falling on deaf ears. Your staff feels the entire job is an interruption to their true passions.

Whether it be acting, writing, singing, sports, going to school, saving for a car, home or college or college for the kids believe me their passions lie outside of your restaurant and you don’t even acknowledge it.

Unfortunately standard business practices has you duped into believing that your food or your restaurant is the most important element of your business success and the remainder of your success relies on your guests, yet it is your wait staff who are the pure, unadulterated embodiment and face of your business, the go-to people and sole point of contact and representation of your business during each customer’s meal. It astounds me that acceptable practices still treat waiters like an afterthought or even worse.

Let’s face it your food alone can’t carry you. Your customers are always looking for...

    1. This is very true. I was a waitress and a bartender as a young teen/twenty-something (and I recommend them both as character-building jobs) and I always got the biggest tips and the largest number of repeat customers when I was hospitable, nurturing without being overbearing, and basically treated them like guests in my own home. People don't JUST go to restaurants for the food - if that were the case they'd skip the hassle and order takeaway. They go to be served in a welcoming environment by warm, knowledgeable people who treat them like human beings rather than walking wallets. More often than not I made great money and had a great time because I chose to work in restaurants that treated their staff with respect, and I took the time to build personal relationships with customers who then became regulars. A lot of restaurant owners don't realize THEY set the tone of their business culture, and when they treat staff in greedy, rude or condescending ways, that attitude becomes the "cultural norm" and trickles down to the customers. And THAT'S one of the main reasons restaurants fail; I've seen it a million times.

But I agree with Chef Ramsay these people are beyond help. You can't be a good manager if you're not a good person.

  18. I really feel bad for Amy and Samy. Everyone bashing them is so typical American. It's sad it is considered good entertainment. Pity that GR didn't took some time to explain to Amy that business is not personal. And that feedback from customers is necessary to adjust your product to their needs. Also that Samy by protecting Amy is keeping her in her fantasy world where everything she does is perfect. It's okay to be not perfect Amy. Saying that I have great admiration for GR, I love his shows.

Also, on ABC's Facebook page, they do nothing but trash GR, so why did he go back? This restaurant really needs to go out of business, and I hope to finally read "closed" on your blog.

    1. We don't know the reason yet. However, this is not the only show that Amy's Baking Company has puled out from - they were also supposed to appear on an episode of Dr. Phil.

Rumors (unconfirmed) suggest that Samy's deportation could be a factor in the pull-outs.

      Delete
    2. Not sure. The couple was suppose to appear on Dr. Phil, and that was pulled, as well. I'm assuming since they continue to flame GR on their FB page, GR's lawyers might have swooped in. Fox didn't say why they pulled the season premiere. It's now going to premiere in May. Perhaps he needs the time to film for another location for the season premiere? Who knows.

  25. The revisit is on Youtube now, and I've just watched it. It's very hyped like the American version always is - the phrase 'never-before-seen footage' is used ad nauseam and it isn't that different from what you've already seen, but it's worth a gander. The best bit is about 30 minutes in when a reporter (notice Gordon does not go in person - was he perchance afraid of the 'gangster'?) goes to teh restaurant and Amy says that Gordon represented them in a bad light and made her look crazy. She then launches into a tirade that makes he look - guess what? - totally unhinged! No surprise there, only maybe the fact that she can't see it herself. I would like to know more about the cakes though, that are obviously not made by Amy. For all their madness, I think they could really make a go of that restaurant with a new USP - the place to go to get insulted and threatened and pay for the privilege. They are both off their rockers!

    1. (notice Gordon does not go in person - was he perchance afraid of the 'gangster'?)

I don't think this is the case. My assumption is that there may be some course for legal action. If GR were to step foot in there again, I think those two would throw a fit, kick him out, and possibly call the police. I don't think they have any actual legal grounds to stand on, but I think GR & Co are smart enough to know that it would not be wise for him to do that.

    2. Those guys did not want Gordon's help so he left. That's why he did not go back himself. Ramsay do not need them, they need him.

  26. I agree, Sammy and Amy shouldn't be running a business, especially one that involves customer service! If those two treat customers and employees like s--t, it's no wonder they're not doing well! What- they've let go over a hundred staff? Amy steals tips meant for the waitresses? Unbelievable, and isn't stealing tips illegal? What's more surprising is the fact that they're even still open! Other people in other episodes who have deserved to succeed have not, and so, they have been forced to sell their restaurants; and yet these two whackos are still around! (I know I shouldn't judge, but I'm sorry-- the owners are whackos! They make some of the other owners in other episodes seem nice! And they continue to blame every one else but themselves for their faults! Unbelievable!)
The more I watch this episode, I can't help but think that maybe Sammy and Amy could join forces with that fighting Welsh couple, Mike and Caron, from Kitchen Nightmares UK... Wow, I can imagine the disagreements, the yelling and cursing, and the fights that would result!

  31. No one has hit on the real reason this crazy hate-filled couple still stays open: the joint is a front for a money laundering operation. Samy's "gangster" goon friends move tons of cash through the place while he keeps his crazy wife occupied with her repackaged baked goods and hobby kitchen.

Crazy is far too mild a word for this couple. I can't imagine what a traumatic life has caused her psychotic break with reality, but I can't help but feel sorry for them. I hope they get some professional therapy.

With massive doses of anti-psychotic meds.

    1. No, it stays open because it's a huge tourist attraction now.

      I live (somewhat) near it.

  36. I couldn't believe that she reacted as if Chef Gordon were the enemy after they invited him there. I think the only things they want is to cry victim and get publicity.

The waitress (Katy?) was fired because she told Chef Gordon about the tips as well as take the tip he gave her. (Notice Amy's expression when GR gives her her tip. And listen what she says later about Katy. Amy knows the reason she gave for firing her is a lie.

I do not know why anyone would work there or patronize the place. They are two very selfish and self centered people.
